Serve with 1 pita and 1 cup fresh veggies.
1 lb (450 g) boneless, skinless chicken breasts (about 2 breasts)
1⁄4 cup oil
2 zucchinis, preferably 1 yellow and 1 green
- Preheat grill to medium-high.
- In a large bowl, whisk together seasoning and oil. Cut chicken into 1” cubes. Add chicken to bowl; stir to evenly coat.
- Using 4-in-1 Mandoline, fitted with 3.5 mm slicer plate, slice zucchini into ribbons. Season with salt and pepper. Thread meat and zucchini onto skewers.
- Place skewers on grill; rotate often until lightly charred and chicken is cooked through, 10–12 min.
